- 3 slices sandwich bread
- 1 onion, grated
- 1 carrot, grated
- 1 heaped tablespoon dried ground coriander
- 1 tablespoon dried ground fennel
- 1 teaspoon sweet paprika
- 1 teaspoon dried oregano
- 1 teaspoon Dijon mustard
- ½ bunch fresh parsley, finely chopped (leaves only)
- 1 egg
- 100 ml extra virgin olive oil
- Salt and freshly ground black pepper

Ingredients
- 1.2 kg ground turkey breast
- 3 slices sandwich bread
- 1 onion, grated
- 1 carrot, grated
- 1 heaped tablespoon dried ground coriander
- 1 tablespoon dried ground fennel
- 1 teaspoon sweet paprika
- 1 teaspoon dried oregano
- 1 teaspoon Dijon mustard
- ½ bunch fresh parsley, finely chopped (leaves only)

- 100 ml extra virgin olive oil
- Salt and freshly ground black pepper
For serving

Method
Place the slices of sandwich bread in a small bowl with water, just enough to cover them. Leave them to soak until softened, then squeeze out the excess water and crumble the bread with your hands.
Heat a little of the olive oil in a small frying pan and sauté the grated onion until softened and translucent. This process mellows the flavor of the onion and removes the sharpness of its raw taste. Remove from the heat and allow it to cool.
Place the ground turkey in a large mixing bowl. Add the crumbled bread along with 2-3 tablespoons of the water in which it was soaked, to help keep the mixture moist, tender and juicy.
Add the sautéed onion, grated carrot, chopped parsley, egg, coriander, fennel, paprika, oregano, Dijon mustard, the remaining olive oil, salt and freshly ground black pepper.
Knead the mixture very well for 3-4 minutes, until all the ingredients are fully combined and the mixture becomes smooth, elastic and fluffy. Proper kneading is essential for allowing the flavors and aromas to blend together.
Cover the bowl with plastic wrap and refrigerate the mixture for 1-2 hours to allow the flavors to develop.
Remove the mixture from the refrigerator and shape into burgers of your preferred size.
Heat a non-stick frying pan or cast-iron grill pan over high heat and lightly grease it with a little olive oil. Place the turkey burgers on the hot surface and cook for approximately 3-4 minutes on each side, until nicely browned and cooked through.
Turn the burgers only once during cooking to help retain their juices and flavor. Be careful not to overcook them, as turkey breast is a lean meat and can become dry.
Serve the turkey burgers warm with fresh rocket, cherry tomatoes, a few drops of extra virgin olive oil and fresh lemon.
Alternative Oven Method
Place the turkey burgers on a baking tray lined with parchment paper and bake in a preheated oven at 180°C (350°F) until they are golden on one side, approximately 12 minutes. Turn them over and continue baking until they are nicely browned on the other side and fully cooked.
Soaking the bread, kneading the mixture well and allowing the turkey mixture to rest in the refrigerator are the secrets to creating tender, juicy and flavorful turkey burgers.
