Grilled squid a la grecque
Υλικά
For the squid
- 1 kg fresh squid, cleaned
- 50 ml extra virgin olive oil
- Salt
- Freshly ground black pepper
- Juice of 1 lemon (for serving)
For the salad
- 120 g feta cheese
- 2 tomatoes, peeled and diced
- ½ dry onion, thinly sliced
- 10 olives, pitted and sliced into rounds
- 10 caper berries, sliced into rounds
- ¼ bunch parsley, finely chopped (leaves only)
- 50 ml extra virgin olive oil
- 1 tsp red wine vinegar
- Juice of ½ lemon
- Salt
- Freshly ground black pepper
Grilled squid a la grecque
Ingredients
For the squid

For the salad

- ½ dry onion, thinly sliced
- 10 olives, pitted and sliced into rounds
- 10 caper berries, sliced into rounds
- ¼ bunch parsley, finely chopped (leaves only)
- 50 ml extra virgin olive oil
- 1 tsp red wine vinegar
- Juice of ½ lemon
- Salt
- Freshly ground black pepper
Method
Clean the squid thoroughly by removing the skin and the soft inner cartilage. Pat dry with paper towels. Marinate with half of the olive oil, salt, and pepper for 2–3 minutes.
Grill the squid on a well-preheated grill or grill pan over high heat for approximately 3–4 minutes on each side, until nicely browned while remaining tender.
Prepare the salad
Peel the tomatoes, remove the seeds, and discard most of their excess liquid. Cut the flesh into large cubes.
In a bowl, combine the tomatoes, onion, olives, caper berries, parsley, and feta cheese. Add the vinegar, lemon juice, olive oil, salt, and pepper, and gently toss to allow the flavors to blend.
Serve the grilled squid with the salad and drizzle with the lemon juice and olive oil just before serving.
Squid requires quick cooking over high heat to remain tender and juicy. Overcooking can make it tough and chewy.
