Chicken with orzo in tomato sauce
Υλικά
- 1 whole chicken (about 1.5 kg), cut into portions
- 500 g medium orzo
- 1 large onion, finely chopped
- 2 garlic cloves, finely chopped
- 3 ripe tomatoes, peeled and diced
- 1 tbsp tomato paste
- 1 glass white wine
- ½ cup olive oil
- 2 bay leaves
- 1 cinnamon stick
- 4–5 allspice grains
- 2 cloves
- Salt & freshly ground black pepper
Chicken with orzo in tomato sauce
Ingredients
- 1 whole chicken (about 1.5 kg), cut into portions
- 500 g medium orzo
- 1 large onion, finely chopped
- 2 garlic cloves, finely chopped
- 3 ripe tomatoes, peeled and diced
- 1 tbsp tomato paste
- 1 glass white wine
- ½ cup olive oil
- 2 bay leaves
- 1 cinnamon stick
- 4–5 allspice grains
- 2 cloves
- Salt & freshly ground black pepper
Method
In a large pot, heat the olive oil and sear the chicken pieces on all sides until nicely browned. Remove and set aside.
In the same oil, add the onion and sauté until softened. Add the garlic and continue stirring. Then add the spices: bay leaves, cinnamon, allspice, and cloves.
Stir in the tomato paste and cook it briefly to release its aroma and reduce its acidity.
Deglaze with the white wine. Once the alcohol has evaporated, add the fresh tomatoes. Season with salt and pepper and let the sauce simmer for about 10 minutes, until it starts to thicken.
Return the chicken to the pot along with its juices. Add enough water to cover it and cook over medium heat for about 40 minutes, until tender.
Add the orzo and cook for 8–10 minutes, stirring regularly to prevent it from sticking.
Remove from the heat, stir, and cover the pot. Let it rest for about 10 minutes so the orzo absorbs the remaining sauce and becomes perfectly creamy.
Orzo continues to absorb liquid even after cooking. Remove the pot from the heat while it is still slightly saucy to keep the dish perfectly moist and flavorful.
