Shrimp bisque

- 3 kg shrimp, with shells and heads
- 100 ml olive oil
- 3–4 ripe tomatoes, peeled and finely chopped
- 1 tbsp tomato paste
- 1 leek (white part only), roughly chopped
- 2–3 celery stalks, roughly chopped
- 2–3 garlic cloves
- 1 large onion, roughly chopped
- 1 fennel bulb, finely chopped
- 20 g fresh ginger, sliced
- Zest of 1 lime
- 80 ml white wine
- 60 ml brandy
- 1 tsp coriander seeds
- 1 tbsp fennel seeds
- 1 tbsp black peppercorns
- 1 star anise
- 1 bay leaf
- 2–3 sprigs rosemary
- 5–6 sprigs thyme
- 2–3 sprigs fresh basil
- Fleur de sel
- Cold water, as needed
Shrimp bisque

- 80 ml white wine
- 60 ml brandy
- 1 tsp coriander seeds
- 1 tbsp fennel seeds
- 1 tbsp black peppercorns
- 1 star anise
- 1 bay leaf
- 2–3 sprigs rosemary
- 5–6 sprigs thyme
- 2–3 sprigs fresh basil
- Fleur de sel
- Cold water, as needed
Method
Clean and prepare the vegetables. Keep the shrimp whole, with their shells and heads, as these will provide the characteristic depth and aroma of the bisque.
Heat the olive oil in a large pot over high heat. Add the shrimp and sauté, stirring continuously with a wooden spoon, until they develop a deep orange color and release their aromas and natural juices.
Add the spices and aromatics: star anise, black peppercorns, coriander seeds, bay leaf, fennel seeds, ginger, rosemary, and thyme. Stir continuously to release their aromas and essential oils.
Add the onion and continue sautéing until it softens and combines with the flavors from the shrimp.
Add the fennel, celery, leek, and garlic. Continue cooking until the vegetables begin to lightly caramelize.
Deglaze with the brandy. Once the alcohol has evaporated, add the tomato paste and cook for 1–2 minutes to reduce its acidity and develop its natural sweetness.
Deglaze with the white wine. Once the alcohol has evaporated, add the fresh tomatoes, basil, lime zest, and fleur de sel.
Add enough cold water to fully cover all the ingredients. Use a pastry brush to clean the sides of the pot, allowing all the concentrated flavors to return to the sauce.
Once the mixture begins to boil, skim off any foam that rises to the surface using a slotted spoon. There is no need for excessive skimming, as a bisque aims to preserve the full intensity and flavor of its ingredients.
Reduce the heat and simmer the bisque gently for about 1 hour, until it becomes concentrated and develops a deep seafood flavor.
Strain the bisque through a fine-mesh strainer, gently pressing the ingredients to extract all their flavor.
Keep the bisque in a fluid consistency, especially when it will be used as a base for other preparations. If reduced further, it will develop a thicker texture and a more intense flavor.
Store in the refrigerator in a clean, airtight container for up to 3 days, or freeze for up to 3 months.
