Mashed potatoes

- 2.2 lb (1 kg) medium potatoes
- 250 ml (1 cup) lukewarm milk
- 120 g (½ cup) butter (82% butterfat)

- 250 ml (1 cup) lukewarm milk
- 120 g (½ cup) butter (82% butterfat)

Method
Wash the potatoes thoroughly to remove any dirt. Place them in a large pot, cover with plenty of cold salted water, and boil for about 25-30 minutes, depending on their size, until they are fork-tender.
Drain the potatoes and let them cool for 2-3 minutes, just enough to handle them comfortably. While they are still hot, peel them, then pass them through a potato ricer or mash them with a potato masher. Transfer them to a saucepan.
In a small saucepan, gently heat the milk with the butter, nutmeg, salt, and pepper until the butter has completely melted and the mixture is hot, but do not let it boil.
Gradually add the hot milk mixture to the mashed potatoes, stirring gently over low heat until the mashed potatoes are smooth, creamy, and fluffy.
Taste and adjust the seasoning with additional salt and pepper, if needed.
Serve the mashed potatoes hot.
To prevent gummy mashed potatoes, pass the potatoes through a potato ricer or mash them while they are still hot.
