Today I would like to share with you another small secret from Kuzina à la Grecque: how to cook liver so that it remains juicy, tender, and full of flavor.

Liver is an ingredient with a strong character and high nutritional value. However, in order to truly shine on the plate, it requires proper handling and careful cooking. With a few simple steps, we can achieve an excellent result while avoiding the tough texture and strong aroma that often discourage many people from preparing it.

A few essential secrets for perfectly juicy liver:

First and foremost, the quality of the ingredient is crucial. The liver should be fresh and have a vibrant, clean color. If it appears very dark or dull, it is usually a sign that it is not as fresh as it should be.

Ask your butcher to clean it properly by removing the fibers and the thin membrane that covers it. This step helps make the liver more tender and pleasant in texture.

Next, place the liver in milk for at least one hour. The milk helps soften the meat and reduces its strong characteristic smell, giving it a more balanced flavor.

After removing it from the milk, dry it very well with kitchen paper, gently patting it dry. This is an important step because if the liver retains moisture, it will not brown properly during cooking.

Heat a frying pan with a little olive oil or preheat the grill. The cooking surface should be properly hot before adding the liver so that it quickly sears and retains its natural juices.

Cook the liver for about 2–3 minutes on each side, depending on the thickness of the slices. Overcooking is the main reason liver becomes tough and dry, so careful timing is essential.

Another small but important tip is to add salt only at the end of cooking. Salting it too early can draw out moisture and make the texture tougher.

Serve the liver immediately after removing it from the pan or grill, with a little fresh lemon juice and freshly ground pepper.

For even richer flavor, you may accompany it with caramelized onions, freshly chopped parsley, or a touch of oregano. These simple additions create a delicious and traditional dish often found in many Greek kitchens.
