A GOOD FRYING PAN

Today I would like to share with you another small secret of Kuzina à la Grecque: the art of proper frying—because a good frying pan requires skill.
In the summer, the frying pan often becomes the star of our table. From simple meze to quick everyday dishes, proper frying can elevate flavor beautifully. Although it may seem like a simple process, in reality it requires attention and technique in order to achieve a crisp texture and the right golden color without making the food heavy.
Below I am sharing a few essential tips that truly make a difference when frying.
First, choose a good-quality frying pan with a thick base and preferably a non-stick surface. This helps distribute heat evenly and prevents food from sticking.
Next, add the appropriate amount of oil depending on the type and quantity of food you will fry. It is important that the oil properly covers the surface of the pan.
Frying should begin only once the oil is well heated. If food is placed in cold oil, it will absorb more fat and will not develop the desired crispy texture.
When coating ingredients with flour or breadcrumbs, shake off the excess flour before placing them in the pan, or use a sieve. This prevents leftover particles from burning in the oil.
Once the oil reaches the proper temperature, place the food gradually in the pan so that the temperature of the oil does not drop suddenly.
During frying, make sure the oil does not reach excessively high temperatures, as this can cause smoking and alter the flavor of the food.
Also, avoid stirring the food continuously. Allow it to fry until it develops a golden color and crisp texture, and only then turn it to the other side if necessary.
Another important element is the quality of the oil. The oil should be clean and should not have been used many times. If you notice that it has darkened or contains residues, it is better to replace it.
Once the food is removed from the pan, place it on absorbent paper to remove the excess oil before serving.
Finally, allow fried foods to rest for two to three minutes before serving. This allows the temperature to drop slightly and helps the aromas and flavors develop more fully.
Which oil should we choose for frying
Personally, I almost always choose olive oil for frying. It is an excellent oil for cooking and frying, offering rich flavor and important nutritional benefits.
The smoke point of olive oil ranges approximately from 190°C to 207°C, which makes it suitable for frying at moderate temperatures as well as for sautéing. At the same time, it gives food a distinctive Mediterranean flavor.
If, however, you prefer oils with a higher smoke point, there are several options available on the market, such as sunflower oil, corn oil, rice bran oil, and coconut oil.
Sunflower oil contains beneficial fatty acids and is rich in vitamin E. It can easily be used for frying potatoes, chicken, fish, and many other foods.
Rice bran oil has a light flavor and delicate aroma and is widely used in Asian cuisine. It is particularly suitable for roasting, frying, and sautéing because it withstands high temperatures and can also be used in sauces and dressings.
Corn oil is rich in antioxidants and healthy fatty acids. It tolerates high temperatures and has a mild flavor, making it suitable for frying foods such as potatoes, chicken, and fish.
Coconut oil is a distinctive choice with a characteristic aroma that adds a unique flavor to dishes. It also withstands high temperatures and can be used for frying meat, fish, vegetables, or eggs.
Butter gives food a unique flavor, but it requires attention because it does not tolerate very high temperatures and burns easily, which can make it taste bitter. It is mainly suitable for light frying of eggs, vegetables, fish, or potatoes.
Finally, there is clarified butter, which is butter from which the water and milk proteins have been removed. It is ideal for frying at high temperatures without burning and is often used in the preparation of sauces and desserts.
Tip: Always fry with caution, as the high temperature of hot oil can cause burns.
