Seville is one of those cities that needs no introduction.
You feel it before you even truly get to know it.
The streets are full of life, music and aromas coming from the kitchens, with people spending their time outdoors, gathered around a table, a glass of wine and a few dishes to share.
What has always impressed me about Andalusia is the way people connect with food. There is no rush. Sitting around the table is a moment to share, to connect and to enjoy each other’s company. And this is something that feels very close to our own Greek culture.
At a small tapas bar in the centre of Seville, I tried dishes made with simple ingredients, but full of flavour and prepared with precision. Good jamón, fresh seafood, perfectly cooked meats and olive oil that played a leading role without overpowering anything.
These experiences are always important for a chef. They remind you that great cooking does not necessarily need complexity. It needs knowledge, balance and respect for the ingredients.
Seville has passion. You see it in the way people cook, the way they talk and the way they share their food. And in the end, this is what makes a city stay with you.
Because at the end of the day, the most memorable flavours are not only the ones you taste. They are the ones connected to a moment, a person, an atmosphere.
