JUICY AND FLAVORFUL BURGERS

Today I would like to share with you another small secret from Kuzina à la Grecque: how to cook juicy and flavorful burgers at home.
The success of a good burger does not depend on complicated techniques, but mainly on the quality of the ingredients and a few simple rules that make all the difference.
The first and most important element is the quality of the minced meat. To achieve truly delicious burgers, it is essential to use high-quality meat from a trusted butcher.
Ideally, the minced meat should be cooked on the same day it is prepared, so that it retains its moisture, aromas, and natural color.
When it comes to beef, cuts such as shoulder (or chuck), which are leaner, work very well when combined with slightly fattier parts such as flank or belly. This balance gives the burger both flavor and the right texture. In general, the minced meat should contain at least 20% fat, which helps keep the burgers juicy during cooking.
For an even softer and more tender result, we can also add a small amount of pork mince, in a ratio of about 70% beef and 30% pork or 80% beef and 20% pork.
Once we add the remaining ingredients, we knead the mixture just enough for everything to combine well and for the flavors to blend. However, it is important not to overwork the mixture, as excessive kneading can make the burgers dense and tough.
If we notice that the mince is too dry or firm, we can lightly wet our hands with a little water and sprinkle some over the mixture to restore the moisture it needs.
After kneading, it is best to let the mixture rest in the refrigerator. For meatballs, about 3–4 hours is ideal, while for burgers about 30 minutes is usually enough.
The burgers can be cooked either on the grill or in the oven.
On the grill, cook the burgers for about 5 minutes on each side on a well-heated and lightly oiled grill.
In the oven, once it has been preheated to 180°C (356°F) using conventional top and bottom heat, cook the burgers for about 8 minutes on each side, until they develop a nice color.
The final cooking time always depends on how well-done you prefer your burgers.
With careful attention to the ingredients and these simple techniques, it is easy to enjoy at home burgers that are juicy, tender, and full of flavor.
