Pan fried pork with red wine
Υλικά
- 1 kg pork (neck or shoulder), cut into bite-sized pieces
- ½ onion, finely chopped
- ½ hot chili pepper, cut into medium-sized pieces
- 3–4 sun-dried tomatoes, finely chopped
- 100 ml olive oil
- 60 ml red wine
- 1 pinch dried oregano
- Juice of 1 lemon
- Salt and freshly ground black pepper

Ingredients
- 1 kg pork (neck or shoulder), cut into bite-sized pieces

- ½ hot chili pepper, cut into medium-sized pieces
- 3–4 sun-dried tomatoes, finely chopped
- 100 ml olive oil
- 60 ml red wine
- 1 pinch dried oregano
- Juice of 1 lemon
- Salt and freshly ground black pepper
Method
Heat a frying pan over high heat and add the olive oil. Once hot, add the pork pieces and sauté until golden brown on all sides.
Add the chopped onion, freshly ground black pepper and a pinch of sea salt. Stir and continue sautéing until the ingredients are lightly caramelized and their aromas are released.
Add the hot chili pepper and the sun-dried tomatoes and cook for a further 1–2’.
Deglaze with the red wine and allow the mixture to simmer until the alcohol has evaporated and the cooking juices have reduced.
Add the lemon juice, stir gently and remove from the heat.
Sprinkle with oregano and serve immediately on warm plates.
For this recipe, you can use pork neck, shoulder or leg, depending on your preference.
