Beef with peas in lemon sauce
Υλικά
- 1 kg beef chuck, cut into portions
- 500 g peas (shelled)
- 2 carrots, sliced
- 1 potato, cut into large chunks
- 1 onion, finely chopped
- 1 garlic clove, finely chopped
- ½ bunch fresh parsley (leaves only), finely chopped
- 2–3 sprigs fresh fennel, finely chopped
- Juice of 2 lemons
- 120 ml extra virgin olive oil
- Salt & freshly ground black pepper
Beef with peas in lemon sauce
Ingredients

- 500 g peas (shelled)
- 2 carrots, sliced
- 1 potato, cut into large chunks
- 1 onion, finely chopped
- 1 garlic clove, finely chopped
- ½ bunch fresh parsley (leaves only), finely chopped
- 2–3 sprigs fresh fennel, finely chopped
- Juice of 2 lemons
- 120 ml extra virgin olive oil
- Salt & freshly ground black pepper
Method
Heat the olive oil over medium-high heat in a large pot and sear the beef until well browned on all sides.
Add the chopped onion and garlic and continue sautéing for 2–3 minutes, until the onion softens and becomes translucent.
Pour in enough cold water to cover the meat. Add the juice of one lemon, season with salt and pepper, then cover the pot with a sheet of parchment paper followed by the lid. Reduce the heat to low and simmer for about 1 hour, or until the beef begins to become tender but is not fully cooked.
Add the peas, carrots, potato, fennel and chopped parsley. Stir gently and continue cooking for another 30–35 minutes, until the vegetables are tender, the sauce has naturally thickened and the dish has become rich and velvety.
Just before removing the pot from the heat, pour in the juice of the second lemon and let the dish simmer for another 1–2 minutes.
Serve immediately while hot, spooning the fragrant lemon sauce over the beef and vegetables.
