Method
In a saucepan, combine the water and olive oil and bring to a boil.
Gradually add the polenta, whisking continuously to prevent lumps from forming.
Season with salt and white pepper, then add the cream cheese. Continue stirring until the cheese has melted and the polenta becomes smooth and creamy.
Cook over low heat for about 20–25 minutes, stirring regularly, until the polenta thickens and develops a silky texture.
Serve immediately while still warm and creamy.
The ideal ratio is 1 part polenta to 4 parts water for a smooth and creamy texture.
You can replace the cream cheese with grated graviera, Parmesan, or any cheese of your choice for a richer flavor.
Polenta pairs perfectly with beef, slow-cooked stews, braised dishes, poultry and mushrooms, as it beautifully absorbs their sauces.
