Method
Heat a non-stick frying pan over medium heat and lightly toast the pine nuts for 2–3 minutes, stirring continuously until they are lightly golden and fragrant. Remove from the heat and allow them to cool.
Place the garlic and a pinch of salt in a mortar and crush them with the pestle until a smooth paste forms. Gradually add the basil leaves, working them patiently until they begin to break down.
Pour in a small amount of the olive oil to help the mixture combine, then add the toasted pine nuts. Continue grinding until a smooth, aromatic paste forms.
Add the grated Parmesan cheese or, if preferred, Pecorino Romano, and continue working the mixture while slowly drizzling in the remaining olive oil until the pesto reaches a rich, creamy consistency.
Taste and adjust the seasoning with salt and freshly ground black pepper according to your preference.
Storage
Store the pesto in a sterilized glass jar in the refrigerator for up to 5 days. Cover the surface with a thin layer of extra virgin olive oil to prevent oxidation and help preserve its vibrant green color.
