  1. Preheat the oven to 200°C fan. Toss the potatoes and onion wedges in a large roasting tin with 2 tbsp olive oil and a good pinch of salt and pepper.

  2. In a small bowl mix the remaining olive oil with the lemon zest and juice, garlic, oregano and thyme.

  3. Pat the chicken dry with kitchen paper. Rub the herb mixture all over the chicken and season generously with salt and pepper.

  4. Place the chicken on top of the potatoes and roast for 1 hour to 1 hour 10 minutes, or until the juices run clear and the skin is golden.

  5. Remove from the oven and rest the chicken for 10 minutes. Toss the potatoes in the pan juices before serving.
